There are a lot of different kind of stills in the world, one of them are call the “coffey” stills. Unlike pot stills, coffey stills can be run continuously with pre-heated mash introduced while the fractionating column continues to operate. This makes distillation faster and more efficient in terms of energy and labour than pot stills, which run on a batch system and must be charged between batches.
In general, pot stills produce a lower-alcohol distillate that retains more of the aromatic oils and large flavour molecules while coffey stills produce a purer, stronger distillate with lighter body and more delicate flavour profile.
Coffey Malt Whisky was developed in 2013 as a result of Nikka’s continuous experiments to widen the variety and offer more excitements to aficionados. Made from 100% malted barley, whisky distilled in a Coffey still is matured in old casks to enhance the rich maltiness, complexity and a silky texture.
