Taylors’ pinnacle Cabernet Sauvignon is named in honour of Bill Taylor Senior, Taylors founder and visionary, whose ambition to craft wines that stand tall amongst the world’s best continues to guide them today. The Taylor family were really inspired by the great wines of Bordeaux, particularly the long lived Cabernet Sauvignons. So with this in mind, Mitchell Taylor expressed a desire to his chief winemaker that Taylors craft an extraordinary wine that represented the utmost refinement of this noble grape and truly embodied his grandfather’s original vision.
The wine was initially matured in a selection of fine-grained French oak barrels – 50 % in new oak and the balance in a selection of two and three year old barrels. After 12 months a barrel selection assessment was undertaken to identify parcels deemed as ‘exceptional’ and these were returned to barrel for a further 12 months maturation prior to bottling
The wine delivers a focused, upfront berry and summer fruits profile that jumps straight to the centre of attention and is counterbalanced by a mouth-watering freshness. There is a ripe and highly integrated tannin and oak firmness to the focused, long finish. This wine has lovely dimensions and a poised elegance and depth that reflects it’s carefully selected provenance, vinification and cellaring.
