Shochu is a Japanese alcoholic beverage typically distilled from sweet potato (imo), rice (kome), barley (mugi), buckwheat (soba), brown sugar (kokuto), or Thai long-grained rice (awamori). The Japanese word 焼酎 stems from the Chinese characters 燒酒, which translates as “burned alcohol” in English and refers to the distillation process through which shochu is produced.
