There is a sense of calmness of a rich liquor with less fruit aroma. With Sake brewing a large quantity of yeast is cultivated to produce lactic acid bacteria. By filling the gohyakumangoku with soft water produced by the nature of the prefecture the fermentation gently proceeds and a “tanrei” sake is born. Best for cuisines with dairy and meals that has good taste and aroma.
